Fudgy Gluten and Dairy Free Brownies

Brownies are one of my earliest memories in the kitchen. The aroma I encountered while making these brought me back to the summer days in my kitchen with my mom. I would always mysteriously sneak off after the brownies were in oven (to avoid the painful cleaning of course). My mom also has many pictures of batter all over my face from devouring the extra batter.
Fudgy Gluten and Dairy Free Brownies
Ingredients
- 4 oz unsweetened baking chocolate (100% cacao)
- 3/4 dairy free butter
- 2 cups granulated sugar
- 3 large eggs
- 1 1/2 teaspoon vanilla
- 1 cup gluten free flour
- 1 teaspoon xanthan gum (omit if flour already includes it)
- 1/2 teaspoon salt
Procedure
- Preheat oven to 350°F. Line a 13×9 inch pan with parchment paper, letting excess hang off on the sides. Then, pray parchment paper and pan with cooking spray.
- In a small saucepan, melt chocolate and butter over medium-low heat. Once melted, combine with sugar in a bowl. Then, add eggs and vanilla and continue mixing. Add flour and combine.
- Pour into pan and bake for 30-35 minutes. It is done when a toothpick comes out not completely clean, but with fudgy crumbs.
- Let cool completely before cutting and serving.
Tip: I recommend using a wooden spoon or rubber spatula to do all the mixing in order to avoid over mixing.
