Gluten and Dairy Free Chocolate Chip Cookies

Gluten and Dairy Free Chocolate Chip Cookies

Ingredients 

  • 1 & 2/3 cups white rice flour
  • 1 tablespoon xanthan gum
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cups butter (dairy free)
  • 1 cup packed light brown sugar
  • 1/2 granulated sugar
  • 2 teaspoon pure vanilla extract
  • 2 large eggs
  • 1 & 1/2 cups dark chocolate chips

Procedure 

  1. Preheat oven to 350°F.
  2. Mix together white rice flour, baking soda, salt, and xanthan gum. Then, set aside.
  3. In a separate bowl, cream the butter and the two sugars together. After combined, add both eggs and vanilla extract to the mixture.
  4. Slowly add the dry ingredients into the wet mixture a little at a time.
  5. Place balls of dough on a baking sheet and bake for 14-16 minutes, until golden brown.
  6. Then, remove from oven and let cool.
  7. Enjoy! These cookies are great for parties, they will be a big hit!

Tip: Adjust the amount of chocolate chips for more or less chocolate.
