Gluten and Dairy Free Christmas Sugar Cookies
Christmas cookies are extremely popular around the world. Over 300 MILLION cookies are left out for Santa on Christmas Eve. As Christmas is my favorite holiday, I thought I would show how to make my favorite cookies! ♥
Gluten and Dairy Free Christmas Sugar Cookies
Ingredients
- 1 cup sugar
- ½ cup dairy free butter (I use Earth Balance)
- 1 large egg
- 1 tablespoon dairy free milk (I use almond)
- 2 teaspoons pure vanilla extract
- ½ teaspoon cinnamon
- ½ teaspoon xanthan gum
- ¼ teaspoon salt
- 2 cups any gluten free flour blend
Procedure
- Preheat the oven to 350°F.
- Cream the sugar and butter together on medium- high speed.
- Add in the egg, milk, vanilla extract, salt, and cinnamon. Mix until fully combined.
- Add xanthan gum and flour, and mix until all is combined.
- Cover the bowl the refrigerate for 1 hour (at least).
- Roll out the dough on a lightly floured surface. Roll out the dough until it is approximately ¼ inches thick.
- Cut out shapes using Christmas- themed cookie cutters.
- Transfer cookies to a baking sheet lined with parchment paper. Bake for 10-12 minutes.
- Remove from the oven once golden brown. Let cool for 5-10 minutes. Frost with desired frosting, I used buttercream frosting.
Tip: Make sure you flour your rolling pin and dough really well when rolling
